Mulled wine pastries

Ingredients for 1 servings:

  • 250 g butter
  • 4 tsp vanilla sugar
  • 4 eggs
  • 100 g jam, apple or pear
  • 300 g flour
  • 1 bag of baking powder
  • 125 ml mulled wine or punch
  • 125 g dark chocolate
  • Fat, for the shape
  • 100 g dark chocolate
  • ½ tsp gingerbread spice

Working time approx. 25 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes

Preheat electric oven to 180°C. Cream butter with vanilla sugar until fluffy, beat in eggs one at a time, and fold in jam (I always use my apple strudel jam with cinnamon). Sift flour with baking powder and stir in alternately with the mulled wine. Roughly chop chocolate and mix in. Spread the batter into a greased, rectangular baking pan or casserole dish (approx. 21 x 32 cm) or half a baking sheet and bake for approx. 25-30 minutes until golden brown. Electric and natural gas oven: 180°C; fan oven: 160°C. If the cake is getting too dark, cover with aluminum foil or baking paper. Let the cake cool slightly and cut into cubes or diamonds. Heat the chocolate (I do this in the microwave at a lower heat while watching). Mix in the gingerbread spice, then coat the diamonds in stripes and let cool completely.
