Jockel's cherry marzipan crumble cake from the tray

Ingredients for 1 servings:

  • 100 g marzipan paste, grated
  • 200 g powdered sugar
  • some vanilla
  • 1 pinch of salt
  • 250 g butter
  • 5 eggs
  • 400 g flour
  • 2 tsp cream of tartar baking powder
  • 130 ml milk
  • 2 jars of morello cherries
  • 100 g marzipan
  • 200 g flour
  • 100 g sugar
  • 35 g brown sugar
  • 140 g butter
  • some vanilla
  • 1 pinch(s) smoked salt

Working time approx. 35 minutes; Total time approx. 35 minutes

A dream for all marzipan lovers and those who want to become one!

Crumble: Cut 100g of marzipan into small cubes and chill. Using the dough hook on a hand mixer, make coarse crumbles from the remaining ingredients and chill these as well. Sponge cake: Grate the marzipan and beat it with the powdered sugar, butter, and vanilla until fluffy. Then add the 5 eggs and the salt and beat everything with a hand mixer for at least 4 minutes until creamy. Then alternately stir in the flour and baking powder mixture and the milk. Spread the dough on a baking sheet (preferably with a baking frame and baking paper or baking foil). Distribute the cherries on the dough and press them in lightly. Sprinkle with the crumbles and marzipan cubes and bake in the oven at 190°C (top/bottom heat) for about 45 minutes. During baking, make sure the marzipan cubes do not overbrown, so place them in the lower third of the oven and perhaps cover them with baking paper towards the end. Another option is to place the cubes on the cake 10 minutes before the end of the cooking time.
