Ingredients for 1 servings:
- 100 g marzipan
- 3 egg yolks
- 100 g butter
- 100 g sugar
- 1 tsp vanilla
- ¼ tsp salt
- 260 g flour
- 1 tsp milk, if needed
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
simple roll biscuits for egg yolk utilization, makes about 60 biscuits
First, mix three egg yolks, butter, sugar, vanilla, and salt until creamy, then knead in the flour. If the dough doesn’t hold together well (egg yolks of different sizes), add a teaspoon of milk. Divide the finished dough into four portions and do the same with the marzipan. Form the marzipan into rolls, which you then cover with dough. Place the whole thing in the freezer for about 20 minutes to help the cookies keep their shape. In the meantime, preheat the oven to 200°C (top/bottom heat). Cut approximately 0.5 cm thick slices from the rolls onto a baking sheet lined with baking paper and bake for about 8-10 minutes. The cookies shouldn’t be too dark, otherwise the marzipan will become too hard.
