Apple sheet cake
Preheat the oven to 175°C (fan/convection oven). Peel the apples and cut them into small, cube-like pieces. Beat the room-temperature yogurt butter with a whisk until fluffy. Add the eggs, vanilla sugar, and erythritol, and mix on medium speed for about 2 minutes. Add the spelt flour and baking powder and mix to form a dough. Add the apple pieces and continue mixing on medium speed for one minute. Pour the batter onto a baking sheet greased with yogurt butter, spread it out, and bake on the middle rack for about 30-35 minutes until lightly golden brown. Dust the apple pie with powdered sugar, if desired.
