Juicy mandarin orange muffins

Ingredients for 1 servings:

  • 2 can/n mandarin oranges, each 175 g drained weight
  • 100 g semolina (soft wheat)
  • 90 g sugar
  • 100 g butter
  • 1 packet of vanilla sugar
  • 100 g flour
  • ½ tsp baking soda
  • 1 ½ tsp baking powder
  • 2 m.-sized eggs
  • 100 g cream cheese
  • Powdered sugar, for dusting

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Preheat oven to 180 degrees Celsius (convection oven). Drain the mandarins thoroughly in a sieve. Bring the butter to room temperature and cream together in a bowl with the sugar and vanilla sugar until fluffy, then gradually add the eggs. Mix the flour, semolina, baking soda, and baking powder and gradually add, then stir in the cream cheese. Finally, carefully fold in the mandarins. Pour the mixture into a muffin tin lined with muffin cups. Bake in the oven for 20 minutes. Once cooled, sprinkle with powdered sugar. If desired, replace the mandarins with morello cherries.
