Jules' sugar cake according to Great Aunt Brigitte

Ingredients for 1 servings:

  • 450 g flour
  • 200 g sugar
  • 1 packet of vanilla sugar
  • 1 packet of baking powder
  • 1 pinch of salt
  • 200 g yogurt
  • 3 eggs
  • 150 ml oil
  • 3 drops butter-vanilla flavoring
  • Grease for the tray
  • 125 g butter
  • 150 g sugar
  • 100 g almond flakes

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Simple, without yeast, with yogurt

Preheat the oven to 175°C (fan assisted oven). Mix all the ingredients for the batter until smooth. Spread the batter on a greased or parchment-lined baking sheet and bake for 10 minutes. During this time, melt the butter for the topping, add the sugar and almonds, and bring to a boil briefly. Then spread it on the cake and bake for another 20 minutes. Allow to cool thoroughly; the sugar mixture on top will be extremely hot! This recipe is very similar to my great aunt’s sugar cake from the Harz Mountains. Unfortunately, I couldn’t get hold of the original anymore, but after lots of trial and error, I’m extremely happy with this one, and it’s a hit at every occasion!
