Ingredients for 2 servings:
- 500 g potatoes, small
- 400 g pork fillet(s) in one piece
- oil
- Clarified butter
- salt and pepper
- Curry powder or spices of your choice
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes
no frills, but with potato wedges
Preheat the oven to 200°C (top/bottom heat). Wash and quarter the potatoes, and place them in a baking dish. Drizzle with a little oil, season with salt and pepper, season well with curry, and mix everything together. Place the dish in the oven for 40 minutes. Caution! If you increase the quantity or have large potatoes, the time can be as high as 50-60 minutes! Remove any silver skin and fat from the fillet, cut it in half, and season with salt and pepper. 10 minutes before the potatoes are finished cooking, heat about 1 level tablespoon of clarified butter in a pan over high heat. Sear the fillet on all sides for about 1 minute each. Then add it to the baking dish with the potatoes for the last 5 minutes and let it cook until cooked through.
