Kafeeluder's pineapple ketchup

Ingredients for 1 servings:

  • 1 pineapple
  • 1 pepper, red, hot
  • 200 ml apple cider vinegar
  • 10 tbsp honey
  • 2 tbsp curry powder
  • 2 tsp salt
  • 1 tsp cornstarch

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Clean and quarter the pineapple, remove the core, scoop out the flesh from the skin, dice, and blend finely in a blender. Halve the bell pepper, slice into thin rings, and add to the blend. Bring the blend to a boil in a saucepan and season with apple cider vinegar, honey, curry, and salt. Stir the cornstarch with a little cold water until smooth, bring to a boil again, and then bottle and seal while still piping hot.
