Ingredients for 1 servings:
- 2 eggs
- 40 g flour
- 40 g oat flakes, fine
- 125 ml milk (UHT milk, soy, spelt, almond or rice milk)
- 1 ½ tbsp sugar
- 1 pinch of salt
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
Separate the eggs, beat the egg whites with half a tablespoon of sugar until stiff, and refrigerate. Stir together the egg yolks, flour, oats, milk, the remaining tablespoon of sugar, and a pinch of salt and let stand for about 10 minutes. Carefully fold in the egg whites. Heat some fat in a pan and carefully add a little of the batter (I always only use half). Bake slowly. As soon as the bottom side turns brown, tear the batter and turn it over. Place in the oven to keep warm. Bake the remaining batter in the same way. Applesauce, berry compote, pudding, or simply powdered sugar go perfectly with it.
