Kaiserschmarrn with apple and orange sauce

Ingredients for 2 servings:

  • 2 eggs
  • 80 g flour
  • 125 ml milk, low-fat
  • 3 drops of rum flavoring
  • ½ tsp cinnamon, ground
  • 1 tbsp sugar
  • 2 apples (e.g. Gravensteiner)
  • 3 oranges
  • 100 ml apple juice, no added sugar
  • 2 tsp powdered sugar for dusting
  • n. B. Sweetener, liquid, a few drops of it
  • n. B. cinnamon to taste

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Separate the eggs. Combine the egg yolks with the flour, milk, rum flavoring, 1/2 teaspoon cinnamon, and 1 teaspoon sugar. Beat the egg whites with the remaining sugar until stiff peaks form and fold in. Peel the apples and oranges and cut into wedges. Bake the batter in a non-stick pan lined with baking paper over low heat for about 4 minutes on each side until golden brown, then tear into pieces with a fork. Heat the apple juice and sauté the apple and orange wedges for about 5 minutes, then season with cinnamon and sweetener to taste. Arrange the Kaiserschmarrn on two plates, dust with powdered sugar, and serve with the apple and orange sauce.
