Ingredients for 1 servings:
- 50 g oat flakes, fine
- 4 tbsp spelt flour
- 2 eggs
- 120 ml milk
- 1 tbsp erythritol (vanilla sugar substitute)
- some cinnamon powder
- 50 g fruit, e.g. cherries or berries
- 1 tbsp coconut oil or butter
Instructions
Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
Separate the eggs. Set aside the egg whites. Mix the oats, spelt flour, egg yolks, milk, sugar, and cinnamon. Let it sit for 10 minutes. Beat the egg whites until stiff and fold in. Heat coconut oil or butter in a pan over medium heat. Add the batter. Spread the cherries or berries on top, pressing down lightly. Fry until golden brown on the underside, then turn and fry the other side. Tear into pieces with two forks and fry for another minute. Serve on plates and dust with powdered sugar.
