Kale or savoy cabbage – that’s the difference

Kale and Savoy cabbage both belong to the so-called winter vegetables and are very healthy thanks to the many vitamins they contain.

  • Green cabbage (Brassica oleracea var. sabellica) is also known as kale because of its curly, rather elongated leaves. There are many different types of kale.
  • It does not grow on the ground like other types of cabbage, but on stalks. Tall specimens, therefore, resemble small palm trees.
  • You can eat kale raw. Otherwise, the kale is prepared and served classically with Kassler or Pinkel.
  • Savoy cabbage (Brassica oleracea var. saubauda) instead grows in a round cabbage shape on the ground.
  • The large, round leaves have a wavy structure and you can see and feel much lighter branching on the dark green leaves.
  • You can also eat savoy cabbage raw. The large leaves are great for making stuffed cabbage. Savoy cabbage is often used for casseroles and stews or it is pureed until creamy.
