Kamut waffles with cinnamon curd

Ingredients for 2 servings:

  • 100 g Kamut, finely ground, e.g. from a health food store
  • 1 tbsp wheat flour, type 405
  • 1 tsp dry yeast
  • 2 tsp sunflower oil
  • 150 ml milk
  • 4 tbsp honey
  • 1 egg(s)
  • 150 g low-fat curd cheese
  • 1 orange(s), the juice
  • e.g. cinnamon, ground
  • e.g. peppermint

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 55 minutes

Combine the kamut flour, wheat flour, and yeast. Knead with the oil, milk, 3 tablespoons of honey, and egg using the dough hook of a hand mixer until the dough bubbles. Cover and let rise in a warm place for about 30 minutes. Mix the quark and orange juice until smooth. Season to taste with cinnamon and the remaining honey. Heat the waffle iron. Pour in about 2 tablespoons of kamut dough and bake into waffles. Serve with the cinnamon quark and mint leaves.
