Karin's Ice Cream Cake – New Year's Cake

Ingredients for 1 servings:

  • 500 g flour
  • 500 g rock sugar
  • 125 g butter or Alsan-S
  • 2 eggs
  • 3 tsp anise, ground and whole
  • 1 tsp cinnamon
  • 1 liter of water
  • 1 pinch of salt
  • possibly cardamom

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

makes about 80 pieces

Boil the rock sugar and water and let it cool again. Add the butter, anise, cinnamon, salt, and cardamom while the sugar water is still warm. Once the sugar water has cooled, gradually stir in the flour and eggs. Let the dough rise. The dough should be very thin; add more water if necessary. Using approximately 2 tablespoons of batter at a time, fry the ice cream cakes in the iron until crispy. Lift them out with a fork and roll them up immediately. Once cooled, store the rolls in a tin.
