Ingredients for 1 servings:

  • 140 g spelt flour, 630
  • 85 ml water, lukewarm
  • 4 g yeast, fresh
  • 4 g salt and 4 g bread crumb improver (if available)
  • 1 dash of olive oil
  • ½ cup sour cream or crème fraîche
  • 1 tsp dill
  • 1 garlic clove(s), diced
  • salt and pepper
  • 100 g smoked salmon, sliced
  • 1 large onion(s), cut into fine rings
  • some cheese, grated (pizza cheese, Gouda, Emmental or Edam)

Instructions

Working time approx. 15 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 15 minutes

Pizza in white

Mix the flour with salt and bread crumbs. Dissolve the yeast in lukewarm water, add it to the flour with a dash of oil, and knead everything into a smooth yeast dough. The dough should not stick. Cover and let rise for about 6 hours. Season the sour cream with garlic, dill, pepper, and salt, and mix well. Roll out the pizza dough thinly, spread it with the sour cream, spread the thinly sliced ​​onion rings (moisten them with a little oil beforehand so that a light film of oil completely coats the onions) on top, sprinkle with grated cheese, and finally the salmon pieces. Season with pepper, if desired. Bake in a preheated oven (240°C or higher) on the pizza setting or with fan-assisted heat for about 7 minutes. Alternatively, bake the pizza in a preheated Alfredo pizza oven on setting 2.5-3 for about 5 minutes.
