Karuni – green spelt salad

Ingredients for 4 servings:

  • 2 onions, finely chopped
  • 2 tbsp olive oil
  • 150 g green spelt
  • 300 ml vegetable stock
  • 3 tbsp sour cream (more if needed)
  • 2 tbsp oil (rapeseed oil)
  • 3 tbsp vinegar (fruit vinegar)
  • ½ bunch fresh herbs, chopped
  • 1 garlic clove(s), finely chopped or squeezed

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Sauté half of the onions in hot olive oil in a pan. Wash the green spelt. Add it along with the vegetable stock and bring to a boil. Let the green spelt swell for about 20 minutes on low heat. Combine the remaining ingredients in a bowl and mix to make a sauce. Add the cooled green spelt, let it infuse, and serve – warm or slightly chilled, depending on your taste. It’s perfect as a side dish with vegetables tossed in butter or with grilled food.
