Kasnocken – Cheese Bread Dumplings Ana´s Style
The perfect kasnocken – cheese bread dumplings ana´s style recipe with a picture and simple step-by-step instructions.
* To sprinkle *
- 1 Onion
- 1 Clove of garlic
- 1 tablespoon Butter
- 1 tablespoon Extra virgin olive oil
- 3 tablespoon Flour
- 200 Milliliters Milk
- 125 g Gorgonzola
- 50 g Freshly grated Parmesan
- 125 g Cheese (any), e.g. a spicy mountain cheese
- 3 Eggs
- Sea salt from the mill
- Tellicherry pepper from the mill
- 1 heaped tablespoon Fresh parsley
- 1 heaped tablespoon Chives fresh
- 50 g Freshly grated Parmesan
- Melted butter
- Finely chopped parsley
- Cut the dried rolls / white bread into 0.5 cm cubes (or use dumpling bread) and place in a bowl. Warm the milk and melt about two thirds of the Gorgonzola in it and let it cool. Grate the Parmesan and cut the other cheeses into small cubes. Rinse and dry the parsley and chives and cut into small pieces / rolls.
- Cut the onion and garlic into fine cubes and sweat until golden, in the pan with butter and olive oil.
- Mix the Gorgonzola milk mixture with the eggs well.
- Now add the whole cheeses, herbs, salt and pepper to the bread cubes, dust with flour and mix in.
- Spread the diced onion / garlic with the fat and pour the milk mixture over it.
- Let it work for a short time and then mix everything well. Now it smells delicious! 😉 Try the dough briefly, season again if necessary. Cover with cling film and leave to rest for at least 30 minutes.
- Fill a saucepan with water, add a little salt and bring to the boil. Now the cams can be formed … for this I briefly moisten my hands, take a heaped tablespoon of the dough, first press it together with the hands overlapping, first roll it into a ball and then into an elongated shape. Repeat this over and over again.
- The batter was enough for 24 medium-sized cams, which is good enough for 4 people for a main meal. If taken as a side dish, it would be enough for about 8 people. If you don’t need that many, you can freeze part of the dough wrapped in foil (ideally as a roll), let it thaw slowly and then process it as normal.
- As soon as the water is ready, put the cams in the boiling hot water, as soon as they float on top, the cams are already ready. At the same time, melt the butter in the pan, amount to taste, and let it heat up.
- Take Kasnocken out of the pot with a ladle, place on the plate, sprinkle with Parmesan and herbs as you like and spoon over the hot butter.
