Cheese dumplings

Ingredients for 4 servings:

  • 300 g white bread, stale, cut into small pieces
  • 250 ml milk, lukewarm
  • 300 g Emmental or Gouda, diced
  • 1 shallot(s), finely chopped
  • 1 tbsp butter
  • 1 tbsp flour
  • 3 eggs
  • 2 tbsp chives
  • n. B. Salt
  • 80 g butter
  • 70 g Parmesan, freshly grated

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Cheese dumplings

Combine the bread and milk, then fold in the diced cheese. Sauté the shallot in butter until translucent, then add it to the bread mixture along with the flour (I also add 2-3 tablespoons of breadcrumbs), eggs, chives, and a pinch of salt. If the dough is too dry, add a little more milk. Mix well and form about 10 oval dumplings. Boil gently in salted water for about 15 minutes. Serve with melted butter and sprinkled with Parmesan cheese. Tip: I put the dumplings in the microwave with a very small amount of water and cook each dumpling for 1 minute at 750 watts.
