Ingredients for 6 servings:
- 500 g mie noodles
- 1 bell pepper(s)
- 2 carrots
- 2 spring onions
- 100 g sugar snap peas
- 1 egg(s)
- 1 tbsp sambal oelek
- 10 tbsp oil
- 6 tbsp soy sauce
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
First, prepare the vegetables: Peel the carrot and slice into thin strips. Wash the bell pepper and slice into thin strips, and slice the spring onion into rings. Leave the snow peas whole or chop them a little smaller, if you like. Fry the egg into an omelet and slice it into strips. In the same pan, fry the vegetables until al dente and place them in a bowl. Add the sliced egg and the marinade ingredients. Cook the mie noodles according to the package instructions and add them to the bowl with the other ingredients. Let everything marinate thoroughly, ideally overnight. Season to taste before serving and add a little oil and soy sauce if desired.
