Ingredients for 1 servings:
- 4 eggs, separated
- 3 tbsp water, cold
- 1 pinch of salt
- 80 g flour, sifted
- 50 g cornstarch
- 1 tsp baking powder
- 3 tbsp cocoa powder
- 1 cup of cream
- 1 cup sour cream
- 1 cup crème fraîche
- 3 packs of cream stiffener
- 2 tbsp honey, liquid
- 100 g sugar
- 3 drops of rum flavoring
- 1 sachet vanilla, liquid
Instructions
Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 10 minutes
For the dough: Beat the egg whites with water and salt until stiff. Cream together the egg yolks and sugar until creamy. Mix the flour, starch, baking powder, and cocoa powder together, then stir into the egg yolk and sugar mixture, alternating with the beaten egg whites. Spread the dough onto a baking sheet lined with baking paper and bake at 175°C for 10 minutes. For the cream: Beat the cream with 1 packet of cream stabilizer until stiff. Mix the sour cream and crème fraîche with the remaining ingredients, then stir in the cream. Cut the base in half, spread the cream on one half, place the other half on top, and chill. Cut into 12 pieces and serve.
