Cut dumplings

Ingredients for 4 servings:

  • 800 g dumplings from the previous day, depending on the size between 6 and 8 pieces
  • 3 tbsp clarified butter
  • Salt
  • pepper
  • 2 eggs
  • 200 ml milk
  • 2 tbsp chives, freshly cut

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Slice the dumplings. Heat the clarified butter in a pan. Fry the dumpling slices in the clarified butter until golden brown, then season with salt and pepper. Preheat the oven to 200°C (180°C fan-assisted). Whisk the eggs with the milk and season. Layer the dumpling slices in a baking dish and pour the milk and egg mixture over them. Bake in the oven for about 20 minutes. Sprinkle with chives. Serve with a mixed salad for a perfect Monday lunch.
