Ingredients for 1 servings:
- 3 cucumbers, approx. 700 g
- 3 zucchini, approx. 700 g
- 3 chili peppers, green
- 2 tbsp peppermint, dried
- 1 tsp basil, dried
- 1 lemon(s), organic
- 1 bay leaf
- 1 tsp sugar, raw
- 1 tsp onion(s), dried
- 1 tsp garlic, dried
- 2 tsp black pepper
- 2 tsp salt
- 2 tsp fish sauce
- 2 tbsp maple syrup
- 100 ml vinegar
- 100 ml water
- 1 pinch(s) allspice
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 50 minutes

Chop the zucchini, cucumber, and chilies. Finely grate the lemon zest and then juice the lemon. Place all ingredients in a deep pot and simmer for 1 hour. Remove the bay leaf and puree everything. Simmer for another 30 minutes and then pour into jars. Pairs well with BBQ and white meat.
