Ingredients for 1 servings:

  • 90 g almonds, blanched, grated
  • 100 g erythritol (sugar substitute) or stevia or coconut blossom sugar
  • 35 g baking cocoa
  • 1 tsp baking powder
  • ¼ tsp salt
  • 90 g cream cheese
  • 60 g butter, melted
  • 2 eggs
  • 1 tsp vanilla extract
  • 80 g cocoa nibs
  • 80 g walnuts, chopped

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Preheat the oven to 170°C (350°F). Combine all dry ingredients and the remaining ingredients. Grease a brownie or casserole dish and pour in the batter. Bake for about 20 minutes and then let cool completely. This recipe yields approximately 10 brownies.
