Ingredients for 1 servings:

  • 200 g biscuits (wholemeal biscuits)
  • 50 g butter or 1 pack of Graham Cracker Crust (American)
  • 4 egg yolks
  • 1 cup condensed milk, sweetened
  • 125 ml lime juice, freshly squeezed
  • 1 cup whipped cream

Working time approx. 35 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 35 minutes

Preheat the oven to 175°C (350°F). Crush the whole-wheat biscuits and toss with melted butter (or prepare graham cracker crust according to the package directions). Press into a baking pan, forming a small rim, and prebake the crust for about 10 minutes. Beat the egg yolks until light and fluffy, then mix with condensed milk and lime juice until slightly thickened. Spread over the biscuit base and bake for another 20 minutes. Let cool, then refrigerate for about 1 hour. Top with whipped cream before serving.
