Ingredients for 1 servings:

  • 140 g biscuit(s) (graham crackers), alternatively butter biscuits
  • 60 g sugar
  • 80 g butter, melted
  • 4 egg yolks
  • 1 can condensed milk, sweetened, 400 g
  • 120 ml lime juice
  • 250 ml whipped cream
  • 40 g powdered sugar
  • Lime(s), thinly sliced, for garnishing

Instructions

Working time approx. 30 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 25 minutes; Total time approx. 4 hours 55 minutes

American Lime Pie

For a 23 cm springform pan or a 23 cm pie dish Preheat the oven to 180 degrees C top/bottom heat. Crust: Crumble the biscuits, then mix well with the sugar and butter in a small bowl. Spread the mixture evenly in the springform pan or pie dish and press down. Bake on the middle rack for 8 minutes, then let it cool completely on a wire rack. Filling: Beat the egg yolks in a bowl until frothy. Pour in the condensed milk and lime juice and mix everything well. Spoon the filling into the crust and bake on the middle rack for about 15 minutes, until firm but still creamy. Let the pie cool completely on a wire rack and then chill for at least 4 hours. Topping: Beat the whipped cream with the icing sugar until stiff peaks form. Spread over the pie with a rubber spatula or pipe decoratively with a piping bag. Decorate with lime slices and chill until ready to serve.
