King prawns with mango and peanut sauce

Ingredients for 2 servings:

  • 2 tbsp olive oil
  • 1 small onion(s), finely chopped
  • 250 g king prawns
  • Salt
  • pepper
  • 2 tbsp parsley, finely chopped
  • 2 cloves garlic, crushed
  • 50 g butter
  • 160 ml pineapple juice
  • 1 tbsp peanut butter
  • 1 tbsp, leveled curry powder
  • 1 mango(s), diced

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

For the sauce, heat the butter in a small saucepan. Deglaze with pineapple juice. Stir in the cold peanut butter to thicken. Season generously with curry, salt, and pepper. Add the mango and heat. Heat the oil in a pan and sauté the onions until translucent. Add the shrimp and fry briefly on both sides. Season with salt and pepper, stir in the parsley and garlic, and toss to coat. Serve the scampi with the sauce. Basmati rice goes well with this dish.
