Kleckselweibs Melon – Banana – Jam

Ingredients for 5 servings:

  • 850 g melon(s), (Galia melon), flesh weighed
  • 150 g banana(s), very ripe, weighed without peel
  • 1 lemon(s), untreated
  • 500 g gelling sugar 2:1
  • 3 peppermint leaves, optional

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Not too sweet and very fruity

Halve the melon, peel, remove the seeds, and dice the flesh. Roughly mash the bananas (about 3) with a fork. Place everything in a saucepan with the peppermint and puree using a hand blender. Add the gelling sugar, bring to a boil, and simmer for about 4 minutes. Wash the lemon, finely grate the zest (just the yellow part!), and then squeeze the lemon juice. Stir the juice and zest into the jam and immediately ladle into hot, rinsed jars and seal the jars.
