Knuckles ~ Pizza
The perfect knuckles ~ pizza recipe with a picture and simple step-by-step instructions.
- 1 Pc. Pork knuckle grilled
- 1 Pc. Frozen puff pastry
- 2 Pc. Beefsteak tomatoes fresh
- 1 Pc. Fresh and big onions
- 3 Pc. Small spring onions
- 1 Pc. Asian garlic bulb
- 6 Pc. Pickled hot peppers
- 40 g Homemade herb butter
- 1 Pc. Orange peppers
- 1 tsp Italian herbal mixture
- Salt, pepper from the mill, freshly grated nutmeg
- Some butter for sweating the tomatoes and onions
- 2 Pc. Eggs double yolk or 4 normal eggs
- 50 g Grated Edam
- * Straw widow’s evening at my neighbor’s or a special girls’ evening. Without a man, without children, without a dog and without a cat … just shoot the bird! Clap and dangle your throat, there is no point in making a pizza dough yourself, so we were of the opinion that a ready-made dough from the freezer would do it too …
now to the pizza
- Preheat the oven to 200 degrees and take the pizza dough out of the freezer and let it thaw.
- In the meantime, prepare, wash and cut the vegetables and remove the seeds if necessary. Scalping the shank or detaching the meat from the bone and cutting it into small pieces, regardless of whether in strips or cubes.
- Score the tomatoes and briefly put them in boiling water until the skin loosens. Peel and cut into small cubes. Put some butter in a small pan and sweat the diced tomatoes in it, season with a teaspoon of Italian herbs. Do not puree!
- Roll out the pizza dough on a baking sheet, spread the sweaty tomato sauce on it.
- In a pan with a little oil, bake the onions until translucent and add the knuckle meat. Do not bake the meat with the onions until brown, just warm it up, season with salt, pepper and nutmeg.
- Now spread the meat with the onions on the pizza base, followed by the pepper, the spring onion and the bell pepper. Put the eggs on top and sprinkle with cheese.
- After a baking time of approx. 15 minutes, the pizza is clear and can be eaten. As a drink I would recommend a Merlo (South African red wine), but a beer goes well with it too. It’s smart to try, maybe you will have as much fun as we did while preparing and eating it too
- Point deduction for the ready-made dough? No problem, because the evening was great and it was worth it for us. It was high time ….. when I think about it, I can’t help but smile and I’m already looking forward to the next straw widow or a girls’ evening!
