Kohhlrabi-zucchini-coconut Soup
The perfect kohhlrabi-zucchini-coconut soup recipe with a picture and simple step-by-step instructions.
- 1 medium sized Kohlrabi
- 1 medium sized Zucchini
- 5 medium sized Potatoes
- 1 size Onion
- Juice of 1/2 lemon
- 350 ml Vegetable broth
- 400 ml Coconut milk
- Freshly ground pepper
- Chopped wild garlic
- Some oil
- Peel and dice the potatoes. Dice the onion. Dice the zucchini. Peel and dice the kohlrabi.
- Sauté together in a little oil. Deglaze with the stock and coconut milk, bring to the boil and simmer for about 20 minutes.
- Finely puree until creamy and season with lemon juice and pepper. Garnish with wild garlic on the plate.
