Kohlrabi and potato soup

Ingredients for 4 servings:

  • 1 onion(s), diced
  • 3 large kohlrabi, cut into small pieces
  • 250 g potatoes, cut into small pieces
  • 1 tbsp butter
  • 1 tbsp vegetable broth, granulated
  • salt and pepper
  • 2 pots chervil, coarsely chopped
  • 125 g whipped cream
  • some radishes, cut into fine sticks

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Sauté the onions in butter. Add the kohlrabi and potatoes. Add 3/4 liter of water and bring to a boil. Season with broth, salt, and pepper. Cover and simmer for about 20 minutes. Add the chervil to the soup, reserving a little for garnish. Briefly purée the soup. Whisk the cream gently and stir in, season to taste, and briefly froth with a hand blender. Serve immediately, sprinkled with chervil and radishes.
