Kohlrabi Carpaccio

Ingredients for 2 servings:

  • 100 g trail mix
  • 1 bunch of Italian herbs
  • 1 clove(s) garlic
  • 2 tbsp balsamic vinegar
  • 50 ml olive oil, or a little more if needed
  • 1 kohlrabi
  • Salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the kohlrabi and slice it very thinly. Chop the trail mix, herbs, and garlic in a food processor, add the oil drop by drop, and season with salt. Divide the kohlrabi between two plates and pour the pesto over it. Refrigerate to marinate.
