Beef in oyster sauce

Ingredients for 4 servings:

  • 500 g steak(s) (rump steak)
  • 1 tbsp soy sauce
  • 1 tbsp cornstarch
  • 3 tbsp water
  • 10 g fresh ginger
  • 2 cloves garlic
  • 800 g spring onions
  • 4 tbsp oil
  • 50 g cashew nuts
  • 1 tbsp soy sauce
  • 125 ml beef broth or vegetable stock
  • 2 tbsp oyster sauce
  • 1 tsp oil (sesame oil)

Instructions

Working time approx. 20 minutes; Rest time approx. 1 day 6 hours; Total time approx. 1 day 6 hours 20 minutes

Cut the meat into thin strips. Mix the cornstarch, soy sauce, and water, stir in the meat, and marinate for about 30 minutes. Finely dice the ginger and garlic cloves. Cut the spring onions into thin strips. Drain the meat slightly (reserving any liquid), then fry vigorously in batches in 2 tablespoons of hot oil for about 2 minutes. Remove and set aside. Add the remaining oil to the frying fat and heat. Briefly sauté the spring onions, add the ginger, garlic, and cashews, and fry everything for about 1 minute. Add the soy sauce, beef or vegetable stock, oyster sauce, sesame oil, and marinating liquid, and bring to a boil. Add the beef and bring to a boil again. Season to taste. Serve with rice. Tip: If you don’t have oyster sauce, replace it with a mixture of 100 ml each of soy sauce and water.
