Kohlrabi salad

Ingredients for 4 servings:

  • 200 g sour cream
  • 1 tsp honey
  • ½ bunch parsley
  • 1 large onion(s)
  • Salt and pepper, white
  • Lemon juice from half a lemon
  • 750 g kohlrabi
  • 2 large apples

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Pour the sour cream into a bowl, finely chop the onion, wash and finely chop the parsley, and add it to the sour cream. Stir in the lemon juice and honey, and season with salt and white pepper. Peel the kohlrabi and core the apples. Grate the kohlrabi and apples (with the skin on) and fold them into the salad dressing. Season to taste. A fresh salad for a barbecue, a summer party, or served with baguette on hot evenings.
