- 4 large pork schnitzels
- 9 eggs
- 8 slices of bread (mixed bread)
- salt and pepper
- 4 tomatoes, sliced
- ½ cucumber(s), sliced
- Paprika powder
- Breadcrumbs
- Fat for frying

Schnitzel with fried egg and bread
Koker breakfast is a very simple and quick dish and ideal when you are short on time. Rinse the schnitzels, trim off any fat and pound them. Season with salt and pepper. Whisk one of the eggs in a deep plate and dip the schnitzels into the eggs. Then coat the schnitzels in breadcrumbs. Heat some fat in a pan and fry the schnitzels on both sides until golden brown. Meanwhile, slice the bread and place two slices next to each other on each plate. When the schnitzels are cooked, spread the cooking fat over the slices. Then place the schnitzels on top and sprinkle with paprika, then cover with aluminum foil. Crack the remaining eight eggs into the pan and fry until fried. Season the fried eggs with salt, pepper, and paprika and place them on the schnitzel slices. For decoration, scatter the tomatoes and cucumbers around the edge of the plate (alternatively, serve with salad) and serve.
