Bulgogi
Cut the beef into very thin slices, either have the butcher do this or freeze the meat briefly and then slice 1 to 2 mm thin using a very sharp knife or bread slicer. For the marinade, finely grate the pear and onion, finely slice the spring onion and mix with the other ingredients. Mix the marinade well with the meat slices and leave to marinate in the refrigerator for at least 1 hour. Fry in a hot pan or on a special bulgogi grill until the meat is cooked. Taste a small piece of the meat and season with a little soy sauce or a pinch of sugar if desired. It should taste slightly sweet. Serve with unsalted rice. Serve with washed green salad leaves, dipping sauces and kimchi, if available.
