Put the flour in a bowl and make a well in the center. Crumble in the yeast and stir into a pre-dough with a little milk and 1 teaspoon of sugar. Cover and let rise in a warm place for about 20 minutes. Add the remaining milk, melted butter, remaining sugar, egg, lemon zest, and a pinch of salt and knead everything into a smooth yeast dough. Cover and let rise for about 30 minutes. Knead vigorously and roll out. Using a pastry wheel (you can also use a knife), cut out rectangles and make a slit in the center lengthwise. Let the yeast pieces rise for about 15 minutes. Heat some oil in the frying pan and fry the doughnuts until golden brown. Remove the fat from the pan from the pan and roll in sugar, and serve warm or cold. This quantity makes 4 servings. Doughnuts taste best fresh.
