  • ¼ liter of water
  • rum

These citrus fruits are called kumquats. They look like small oranges. You can eat them raw with the peel; they taste sour and tart. They taste particularly good soaked in white rum! Boil 500g of kumquats in a solution of 500g sugar and 1/4 liter of water for about 5 minutes. No longer, or they’ll burst! Then, using a slotted spoon, scoop them without syrup into a clean, screw-top jar and cover them completely with good rum. Let them steep for at least 8 weeks. After that, eat them on their own or serve them with cream, ice cream, fruit salad, vanilla cream, or chocolate pudding. These dwarf oranges originally come from China and Vietnam, but are now also grown in Japan, Brazil, Africa, North America, and the Mediterranean. Soaked in syrup, they go well with duck and game. Or you can make jam from them.
