Ingredients for 3 servings:

  • 250 g rhubarb
  • 1 onion(s), red
  • 15 g butter
  • 1 tbsp, heaped sugar
  • 60 ml red wine
  • 1 tbsp, leveled salt and pepper, green, freeze-dried

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Wash and trim the rhubarb, and cut into approximately 3 cm long pieces. Halve or quarter thicker stalks. Peel the onion and slice into thin strips. Sauté the onions in the heated butter, add the sugar, and let it caramelize. Deglaze with red wine and simmer uncovered for about five minutes. Add the rhubarb pieces and let everything simmer in a covered pan for three minutes. The rhubarb shouldn’t fall apart! Season with salt and green pepper. A tart vegetable that goes well with fish, roast pork, poultry, liver, and more.
