Ingredients for 2 servings:
- 3 bananas
- 2 egg yolks
- Oil (vegetable oil)
- 200 g peanuts
- 1 apple
- 1 onion(s)
- Curry powder and sugar
- lemon juice
- 1 cl apple juice
- salt and pepper

Peanut bananas from Ghana
Sauté the onions in the oil, then add the ground peanuts and grated apple. Season with curry, sugar, lemon juice, pepper, and salt, and fry over high heat for three minutes. Finally, deglaze with the apple juice and simmer for 20 minutes, stirring constantly. Cut the bananas into large pieces, fry in the oil until golden brown, and drain on kitchen paper. Whisk the egg yolk vigorously, toss the fried bananas in the egg, and fry again in the oil until crispy. Pour the sauce over the bananas before serving.
