Ingredients for 4 servings:

  • 50 g flour, type 405
  • 40 g Parmesan, freshly grated
  • 40 g almond(s), grated
  • 40 g butter
  • 1 tsp white wine
  • 1 pinch of salt
  • 100g Gorgonzola
  • 50 g mascarpone
  • 1 tsp cream
  • Food coloring red and green

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 20 minutes

Carefully knead all of the dough ingredients together. Cut into two equal pieces. Add food coloring to each piece according to your desired intensity and knead the doughs again separately. Wrap both pieces of dough in cling film and let them rest for about 30 minutes. Now form them into small, equal-sized balls with a diameter of about 2.5 – 3 cm. The size depends on the desired number. Make sure you form an even number. Place them on a baking tray lined with baking paper and bake in a preheated oven at 170 °C for about 20 minutes and then let them cool. In the meantime, prepare the filling. Mix the Gorgonzola and mascarpone with a very small amount of cream. The filling should still be spreadable. Using a piping bag, put a little filling on the flat side of one of the halves and lightly press the other half against it so that they stick together well.
