Lamb chops with mint

Ingredients for 4 servings:

  • 4 large lamb chops, double
  • 3 tbsp oil
  • 3 cl whisky or cognac
  • pepper, black
  • Ginger, ground
  • 2 garlic cloves
  • 4 sprigs of mint, fresh
  • 8 m.-large tomato(s)
  • 60 g herb butter
  • 4 tbsp cream
  • Salt

Instructions

Working time approx. 25 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 25 minutes

Combine the oil with the whiskey, pepper, ginger, crushed garlic, and two chopped mint sprigs. Marinate the meat in it for 3 hours. Then dry and grill for 5-8 minutes. Score the tomatoes crosswise on top, spread some herb butter on each one, and grill. Heat the marinade, stir in the cream, and season to taste. Season the lamb chops and tomatoes with salt, arrange on the plate, garnish with the remaining mint, pour over the cream sauce, and serve.
