Ingredients for 1 servings:

  • 6 eggs, separated
  • 150 g sugar
  • 1 packet of vanilla sugar
  • 150 g flour
  • ½ pack of baking powder
  • 500 ml peach juice
  • 500 ml passion fruit juice
  • 3 packs of pudding powder, vanilla flavor
  • 100 g sugar
  • 1 can peach(s)
  • 600 ml cream
  • 3 packs of cream stiffener
  • 50 g sugar
  • 3 half peaches
  • 100 g apricot jam
  • Chocolate coating, dark

Instructions

Working time approx. 50 minutes; Total time approx. 50 minutes

for 1 baking tray

Beat the egg whites until stiff. Beat the egg yolks with the sugar and vanilla sugar until frothy. Mix the flour with the baking powder and fold in. Finally, fold in the stiff egg whites. Spread the batter on a baking sheet lined with baking paper and bake in a preheated oven at 190°C for 12-15 minutes. Then let the base cool. Drain the peaches, set aside 3 peach halves, and puree the remaining peaches. Make a pudding from the peach juice, passion fruit juice, pudding powder, and sugar. Stir the pureed peaches into the pudding, spread the filling on the sponge base, and let cool. Whip the cream with sugar and cream stabilizer until stiff and spread on the cooled pudding. Cut 12 or 24 wedges from the 3 peach halves and arrange them on top of the cream. To decorate, heat the jam and chocolate coating separately and decorate the cake with them.
