Lamb's lettuce with apple and potato dressing

Ingredients for 4 servings:

  • 2 large potatoes, floury
  • Salt
  • ⅛ liter broth, hot
  • 2 tbsp Balsamic vinegar, white
  • 4 tbsp oil
  • 1 small onion(s)
  • 1 small apple
  • 1 tsp mustard
  • pepper
  • 1 bunch of chives
  • 250 g lamb’s lettuce
  • Sugar
  • Croutons

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and dice the potatoes, boil in salted water until tender, drain, and allow to cool. Press them through a potato ricer and mix with the broth to form a thick, smooth sauce. Add the vinegar and oil. Peel the onion and apple, finely grate both, and stir into the potato dressing. Season to taste with mustard, salt, pepper, and sugar. Divide the lamb’s lettuce among plates, drizzle with the sauce, and sprinkle with the finely chopped chives. Serve the croutons separately.
