Lamb's lettuce with carrots

Ingredients for 1 servings:

  • 150 g lamb’s lettuce
  • 2 m.-sized carrot(s)
  • 2 tbsp sunflower seeds
  • 1 small onion(s), red
  • 1 tbsp honey
  • 1 tsp lemon juice
  • 1 ½ tbsp raspberry vinegar
  • 2 tbsp rapeseed oil
  • salt and pepper
  • Salad herbs

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash the lamb’s lettuce thoroughly and remove any small stalks. Peel the carrots and slice or grate them into fine sticks. Finely chop the onion and place it in a salad bowl. Mix with the spices, honey, lemon juice, vinegar, and oil. Add the grated carrot sticks and sunflower seeds and let it sit for a while. Fold in the lamb’s lettuce just before serving. Tip: It tastes even better if you roast the sunflower seeds in a pan without fat until they start to smell fragrant.
