Lamb's lettuce with goat cheese

Ingredients for 4 servings:

  • 120 g lamb’s lettuce
  • 2 stalks of thyme
  • 1 shallot(s)
  • 1 clove(s) garlic
  • salt and pepper
  • 1 tsp sugar
  • 3 tbsp white wine vinegar
  • 4 tbsp oil
  • 3 tomatoes, firm
  • 50 g sunflower seeds
  • 2 tbsp honey, liquid
  • 4 small goat cheese slices

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Sort and trim the lamb’s lettuce, wash thoroughly, and drain well. Rinse the thyme and roughly chop the leaves. For the vinaigrette, peel the shallot and garlic. Finely dice the shallot and press the garlic. Whisk together a marinade of salt, pepper, sugar, vinegar, and oil. Mix in the shallot and garlic. Trim and wash the tomatoes and cut into wedges. Lightly roast the sunflower seeds in a dry pan. Heat the honey in a pan. Brush the goat’s cheese with it. Sprinkle with thyme. Briefly bake the goat’s cheese slices in the oven until they are lightly browned. Arrange the lamb’s lettuce with the tomatoes and cheese slices decoratively. Drizzle with the vinaigrette, sprinkle with the sunflower seeds, and serve immediately.
