Lentils with bacon

Ingredients for 3 servings:

  • 1 m.-sized onion(s)
  • 100 g bacon, diced, streaky
  • 1 tsp oil
  • 300 g lentils, from the can
  • 1 tsp vinegar
  • salt and pepper
  • 1 bunch parsley, finely chopped
  • possibly flour – roux (roux)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Finely chop the onions and fry them in oil. Briefly fry the bacon cubes. Drain the lentils and rinse them a little. Add the lentils and pour in water (or vegetable stock) until everything is covered. Stir in the vinegar and simmer for 25-30 minutes. You can add a roux or roux to finish, depending on your taste. Serve hot, sprinkled with parsley, and with bread dumplings.
