Lamb's lettuce with orange fillets

Ingredients for 4 servings:

  • 150 g lamb’s lettuce
  • 2 oranges
  • 1 piece(s) Parmesan
  • Salt
  • pepper
  • Sugar
  • 3 tbsp white wine vinegar
  • 4 tbsp sunflower oil
  • 1 tbsp oil (grape seed oil)
  • 1 shallot(s)
  • possibly balsamic vinegar

Working time approx. 15 minutes; Total time approx. 15 minutes

Trim and wash the lamb’s lettuce, drain, or spin dry if necessary. Peel the oranges and score the insides with a sharp knife to remove the segments. Mix the vinegar, salt, pepper, and sugar to make a dressing; blend until the spices dissolve, then add the two oils and mix. Season to taste. Peel the shallot and slice it into thin rings. Arrange the lamb’s lettuce on plates, arrange the orange segments and shallots on top, and then grate Parmesan cheese over the salad. Drizzle the dressing over the salad. For non-vegetarians, you can add thin slices of raw ham. Serve with baguette.
