Large spaetzle

Ingredients for 2 servings:

  • 2 eggs
  • 1 pinch of salt
  • 300 g flour
  • 150 ml water
  • some butter

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Whisk the eggs in a bowl. Add salt, water, and flour (the batter shouldn’t be stiff, but it shouldn’t be runny either; it should be very thick! Otherwise, it will dissolve in the water and overcook). Bring a pot of salted water to a boil. Scoop out a teaspoonful of batter and drop it into the water. Let it sit for 15-20 minutes. Drain. Melt the butter in a pot and fry the spaetzle until lightly golden, adding a little salt. Serve with lettuce and other leafy greens.
