Ingredients for 2 servings:

  • 2 eggs
  • Salt
  • Flour
  • Water
  • butter

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Whisk the eggs, add a pinch of salt and a little water, then add enough flour until the batter is really thick. Caution: If the batter is too runny, the spaetzle will dissolve in the water, so feel free to make it really thick and maybe test it with a spaetzle first. Boil salted water in a pot, scoop out a teaspoon of dough and add it to the pan, let it sit for 15-20 minutes, then drain. Melt butter in a pan, add the spaetzle and fry until lightly golden, adding a little more salt if necessary. It goes very well with lettuce and bacon, or with any other salad, but it can also be used as a dumpling substitute for roasts or simply eaten with sauce. It’s very popular with children, by the way. My son could live off it alone.
