Lassi with cucumber

Ingredients for 2 servings:

  • 1 cucumber(s)
  • 200 ml vegetable stock, very cold
  • 250 g yogurt
  • Cumin, ground
  • 1 tbsp mint, chopped
  • salt and pepper
  • some chili powder

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Peel, deseed, and slice the cucumber. Place it in a tall bowl with the broth and yogurt and puree with a hand blender. Season with cumin, salt, pepper, and chili. Stir in the mint leaves and serve.
